Hi, everyone!
For those of you who don’t know me, I’m Chastity Bush (yes, that’s my real name) and I’m the author of several romance novels. Like many of you, I’m a wife, and the mother of two great girls, ages eight and thirteen.
With summer upon us our kids are either out of school for summer vacation, or about to be, and if your life’s anything like mine, you’re a busy bee. For me, the hardest thing to do in the summertime is please my picky eaters.
With picky eaters, it’s always hard to prepare a dinner or treat that everyone enjoys.
After some digging around on the web I found two great recipes that my family loves.
They’re both incredibly simple, yet super tasty! The first is a yummy Parmesan Crusted Chicken, and the second is a fantastic Gooey S’mores Cookie. I hope you enjoy them. I know my family does!
Parmesan Crusted Chicken (You can find this on http://www.hellmanns.com/)
Ingredients
- 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
- 1/4 cup grated Parmesan cheese
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
Directions
- Preheat oven to 425°.
- Combine Hellmann’s® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
- Bake 20 minutes or until chicken is thoroughly cooked.
- Also terrific with Hellmann’s® or Best Foods® Light Mayonnaise or Hellmann’s® or Best Foods® Canola Cholesterol Free Mayonnaise.Cost per recipe*: $7.16

- Timesaving Tip: Try making this dish with thin-cut boneless skinless chicken breasts! Prepare as above, decreasing bake time to 10 minutes or until chicken is thoroughly cooked.
Gooey S’mores Cookies

*This recipe calls for the use of parchment paper, but I found it MUCH easier and a lot less hassle by just spraying my cookie sheet very well with non-stick cooking spray. It also calls for mini-chocolate chips and extra-mini marshmallows, but I used regular chocolate chips and small marshmallows and they came out super gooey and tasty!
(If you use the cinnamon graham crackers these cookies have a fantastic burst of cinnamon flavor!)
Ingredients
1/2 cup (1 stick) butter, softened
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/3 cups flour
3/4 cup graham cracker crumbs (7 full graham cracker sheets)
1 teaspoon baking powder
1/2 teaspoon salt
1 cup Mini Hershey’s Kisses (or chocolate chips/chunks)
1 cup Jet Puffed Mallow Bits
Directions
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper and spray with cooking spray. Using a mixer, cream the butter and sugars until light and fluffy, about 3 minutes. Add the egg and vanilla and beat for an additional 2 minutes.
Meanwhile, use a food processor or blender to crush 7 graham cracker sheets into 3/4 cup fine crumbs. In a separate bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients, and mix on low speed until the dough just comes together. Add the chocolate and marshmallows and stir to combine.
Place 1.5 tablespoon sized scoops of dough onto the prepared cookie sheet. Bake at 350 for 10-12 minutes.
