Apple, Cheese, and a Whole Lot of Yum

As I prepare to celebrate Thanksgiving, I’m reminded of how much I have to be grateful for.

I’m thankful for the wonderful people in my life, and all of you who take the time to read my blog, leave comments, and keep following along.

Thank you for sticking with me, supporting me, and being part of this little corner of my world.

And since Thanksgiving wouldn’t be complete without a little something delicious to share, I have a recipe that’s perfect for the occasion.

Maple Apple and Aged Cheddar Bites

These bites meld three of our favourite things; crisp autumn apples, sharp cheddar and Canadian maple syrup.

They’re easy to make, delicious to eat, and fancy enough to make everyone think you spent far more time in the kitchen than you actually did. You’re welcome.

Ingredients:

1 sheet frozen puff pastry, thawed
1 crisp apple, peeled and thinly sliced
1 cup shredded old or extra-old cheddar cheese
2 TBSP pure Canadian maple syrup
1 large egg, beaten
fresh thyme leaves (optional)
freshly ground black pepper (optional)

Directions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Cut the puff pastry into 16 small squares and place them on the baking sheet.

Brush the edges lightly with beaten egg. Add a little cheddar to each square, followed by a thin slice of apple.

Drizzle lightly with maple syrup and sprinkle with thyme leaves and black pepper, if using.

Bake for 15–18 minutes, until the pastry is puffed and golden and the cheese is bubbling.

Let cool for a few minutes before serving.

Add a tiny extra drizzle of maple syrup if desired.

The sharp cheddar balances the maple syrup’s sweetness. Seriously delicious, and best served warm.
